With over 40 years of experience in the kitchen and an extraordinary career that’s taken him from military mess halls to five-star outback resorts, Colin brings a wealth of knowledge, passion, and flavour to the table. He’s known not just for his cooking, but for his respect for country, culture, and the people he serves.
A Journey from New Zealand Farms to Australian Icons
Born in the rural farmlands of New Zealand, Colin began his career in the New Zealand Army before transferring into the Australian Army. It was during these early years that he discovered a deep passion for food — one that would take him across some of Australia’s most remote and iconic destinations.
Over the decades, Colin has led teams as Executive Chef at renowned venues such as:
- Kings Canyon Resort (NT): Where he redefined bush dining, blending native ingredients like lemon myrtle, wattle seed, and saltbush into contemporary Australian dishes.
- Desert Cave Hotel (SA): Deep in the opal capital of Coober Pedy, Colin delivered high-end hospitality in an underground hotel setting — an experience as unique as the cuisine he served.
- The Ghan: Aboard Australia’s legendary rail journey, Colin crafted gourmet meals inspired by the land and people encountered along the way.
- Norfolk Island & Australian Parliament: From island escapes to overseeing VIP service in federal hospitality roles, his versatility and leadership have left a mark on every kitchen he’s entered.
- Group Executive Chef, CQHG (Queensland): Most recently, Colin has mentored young chefs and led multi-venue operations, sharing his skills and lifting standards across Queensland’s hospitality scene.

What truly sets Chef Colin apart is his deep respect for Indigenous culture and cuisine. His time in the Northern Territory sparked a lifelong appreciation for native ingredients and traditional methods — an influence that continues to shape his approach today.
